Family tradition.

Monday nights are my family’s weekly “pizza & a movie” night. We all cram onto the living room couch and chow down on homemade pizzas and carrot sticks while watching “Laura” (a.k.a Little House on the Prairie), or something equally family-friendly.

Inevitably, halfway through whatever we’re watching, my kids begin begging me to make them cookies to top off their ever growing appetites. And, since it’s almost bedtime, I usually try to fix a cookie that isn’t going to send them bouncing off the walls. Not that they need any help in that area…

I also aim for super easy, because ‘almost bedtime’ can usually be exchanged for ‘mommy’s brain is about to turn off.’ You moms and dads know exactly what I’m talking about!

The sweetest of potatoes.

I don’t know about your house, but over here, with 8 different people come 8 different palates, so it’s almost a given that not everyone’s going to like everything. Except pizza and chocolate chip cookies. Everyone likes those. They all love regular white potatoes, too.

But sweet potatoes? Not so much. You’d think that with the word ‘sweet’ in their name everyone would love them! And why wouldn’t they? They are, after all sweet, but they’re also loaded with nutrients! They’repacked withpotassium,vitamin A,vitamin Candvitamin B6, and also contain antioxidants. Plus sweet potatoes are low on the glycemic index, meaning they can help balance blood sugar and reduce the risk of insulin resistance.

Now, before you foodies get your panties in a bunch, I know sweet potatoes aren’t actually potatoes. It just made a good title for this section… haha.

So back to the sweet potato cookies…

When it comes to these little cookies – surprise! – each and every one of my non-sweet-potato-loving kids (and hubby) gobble them up! And they even knew before hand that there were sweet potatoes in them. I guess it just goes to show you the power of putting stuff in cookies… 😉

Paleo Spiced Sweet Potato Cookies

Free of grain, gluten, dairy, and refined sugar.

Ingredients

Instructions

Preheat oven to 350.

Place all ingredients in a blender, with dry ingredients on top, and puree until smooth.

Scoop rounded spoonfuls of dough onto a parchment-lined cookie sheet.

Bake for 25 minutes, or until cookies are golden-browned on top and spring back slightly when you touch them.

Devour.

Notes

I use my homemade coconut flour, if you use a conventional brand you may need to play around with the measurements some.

Also, please note that these cookies are very soft! Don’t let that dissuade you from their deliciousness, though. 😉

    I made these today, they came out quite delicious, if a bit soft. Is that how yours come out? I did change up the recipe a bit, I subbed 2 overripe bananas for the honey, used 1/4 c. each butter and coconut oil and added 1/2 cup chopped pecans.

    I love the flavor, but I was hoping for something more “cookie-like”, either chewier or slightly crunchy. Mine came out very “bready” with a texture similar to a slice of quick bread.

      You can definitely try. You may have to use more, since almond flour doesn’t soak up as much moisture as coconut flour.

    This recipe says to bake cookies 40-45 minutes, that seems like way too long. Is the timing correct?

      The recipe actually says to bake for 25 minutes. Perhaps you commented on the wrong recipe? 🙂
