What can I use in cookies instead of baking soda?
Baking powder is the most common substitute for baking soda.
This is because the leavens are very similar compared to baking soda. You will probably need to use more baking powder when you use it as a substitute because the taste isn’t quite as strong.
Sometimes people also use self-rising flour. The reason is because it already has properties in it that help the rising process.
One other common substitute is egg whites. Egg whites also have the ability to leaven recipes and help to hold the structure of the cookies as well.
What happens if you bake cookies without baking soda?
If you choose to leave out baking soda from your cookies, they will most likely become very dense when they are baked. This is because you are taking out the key ingredient for the leavening process.
Leavening is the process that allows your cookies to rise and become soft when they are in the oven. Baking soda for cookies is like yeast for bread. This is why it is important to use a common substitute like the ones I mentioned above so that your cookies can still turn out like they are supposed to.
